2 Eggs

1 Tablespoon Apple Cider Vinegar

1/4 Cup Melted Butter

1/4 Cup Honey

1 1/4 Cup Warm Milk

1 teaspoon Salt

1 Tablespoon Xanthan Gum

2 Cups Barley Flour (shake down upon measuring)

1 Cup Tapioca Flour

1 packet Active Dry Yeast (1/4 oz)

Place all ingredients in this order into the bread maker. Set on Basic. Check occasionally if flour needs to be scraped from sides of the pan.

Notes: I used Stone Ground Organic Whole Hulled Barley from Food to Live. It’s not cheap- from Amazon, it was $13. I’d love to experiment with other brands of Barley flour, or even milling my own. Might be cheaper??? Pearl Barley is processed, but the Whole Hulled Barley is not nor has the grain been genetically modified. The tapioca flour that I used was Anthony’s brand. I’d love to hear feedback of anyone using other brands of flour as well as making it conventionally and not in a bread maker.
