Filling:

6 cups frozen cherries

3/4 cup sugar

2 Tablespoons honey

1 1/2 Tablespoon cornstarch

1/8 teaspoon salt

Topping:

1 1/2 cup flour

2 Tablespoons sugar

1/2 t soda

1/2 t baking powder

1/4 t salt

1/4 cup butter

2/3 cup buttermilk

Note: if you don’t have buttermilk, add a small amount of lemon juice to the milk.

Preheat oven to 400 degrees. Butter a 9 in baking pan or 6 ramkins.

In a medium saucepan, cook all the filling ingredients just until cherries are soft and in the sugar makes a syrupy sauce. Pour into prepared baking dish or ramkins.

For the topping, in a medium bowl combine all the ingredients EXCEPT the buttermilk. Work mixture with hands until it looks course. Lightly mix in buttermilk JUST until combined. Do not overmix. Spoon over the cherries. Sprinkle cinnamon and sugar on top.

Bake for 25-30 minutes. Consider putting a baking sheet under the pan in case it drips during baking.
