This is a family favorite soup recipe. Even my pickiest eater loves it. Don’t omit the cabbage. It adds some really nice flavor when cooked. You can add any type of sharp cheddar cheese- white or orange. Medium Cheddar doesn’t add the same flavor, so stick to sharp!

In large stockpot, sauté:

1 large onion, chopped

4 celery stalks, chopped

3-4 large carrots, chopped

3 T butter or ghee

After onions and veggies are semi-soft, add

8 cups water

8 t bouillon

½ head cabbage, sliced

1 can corn, drained

3 large boneless chicken breasts

1 t Italian seasoning

2 t parsley

salt and pepper to taste

Let simmer till chicken can be cubed or shreds easily.

Stir in 8 oz grated sharp cheddar cheese
