This recipe serves 8 -10. It’s so easy and delicious!
2 lbs raw shrimp, deveined and shelled and patted dry
1/2 cup Mayonaise
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
2/3 cup panko
2/3 cup shredded coconut
1/4 cup cornstarch
1/2 cup sweet orange marmalade
1/4 cup Dijon Mustard
1/4 cup Honey
1/4 teaspoon hot pepper sauce
Preheat oven to 425. Line sheet pan with parchment paper.
In medium-size bowl, mix mayonnaise, salt and cayenne pepper. Mix in prepared shrimp and stir till all is evenly covered.
In a sealable bag, pour in panko, cornstarch and coconut. Consider chopping the shredded coconut into smaller bits before putting into bag. Shake up mixture to evenly blend.
Put shrimp into bag and gently shake till all shrimp is evenly coated.
Place all shrimp onto sheet pan evenly spaced apart. Bake at 425 for 20 minutes, turning once during baking.
While shrimp is cooking prepare dipping sauce. In small bowl, blend the marmalade, mustard, honey and hot pepper sauce. Stir well
Serve shrimp with dipping sauce and enjoy!
